Dec 08, 2014 This Sweet Potato Smoothie really tastes like a pumpkin pie milkshake – super-creamy, warmed with cinnamon and vanilla, with a lovely pale, milkshake-y hue – if I hadn’t made it myself, I wouldn’t believe it’s sweetened only by dates and banana. It’s so dessert-like that it’s no surprise my little guy devours it. Although I suppose his opinions don’t carry much weight now that I’ve disclosed his taste for dog water. It’s funny, he hasn’t got many words, but he knows the sounds of everything (animals especially, but also the vacuum cleaner, etc.). So when he wants a smoothie, he makes a dramatic whirring sound, imitating the blender. Pretty adorable, no? Ok, sorry, I’ll stop momming. It was so yummy that I scribbled the recipe right on the owner’s manual so that I could share it with you. It makes a delicious, filling breakfast – and healthy! Really just sweet potato, banana, dates and milk. To cook the sweet potato, prick it a few times and cook in the microwave until tender (the time will depend on the size of the potato – check it and turn it every 2 minutes), OR you can cut it in cubes and steam it, OR you can roast it in the oven, if you’re turning it on anyway. If you have a high powered blender like a Vitamix, you don’t even need to take off the skin – it’ll be imperceptible in the smoothie. Otherwise, use the flesh only, cut in chunks or scooped by spoonfuls. Are you a smoothie-for-breakfast person? P.S. I realize this post sounds a bit sponsor-y, but it’s totally not.
