Sweet Diamond Cuts is very easy to make and I love the whole process especially cutting them into diamonds with a special cutter. I always struggle cutting diamond shapes so I usually rehearse the pattern once in a paper sounds silly?! yes trust me I do it every time I have to cut them into diamonds even for kaju katli I did that.
About Sweet Diamond Cuts
Sweet Diamond Cuts are made using flour, powdered sugar, ghee, salt and oil. A simple dough is made with flour, powdered sugar, salt and ghee then cut into diamonds and deep fried. Finally the diamond cuts are tossed in powdered sugar which tastes so good. Diamond cuts are very easy to make that even beginners can try. Diamond cuts can be made in 2 versions spicy diamond cuts and sweet diamond cuts. Both are addictive and great as a tea time snack. You can use maida or wheat flour for these diamond cuts. If you are looking for a healthy alternate then use wheat flour and I am sure it won’t disappoint you. I have tried with wheat flour and it turned out great.

Sweet Diamond Cuts Ingredients
Flour – Traditionally maida is used for diamond cuts so I used the same. But you can replace it with half and half of wheat flour and maida too. Sugar – Grind granulated sugar to a fine powder and use it. Ghee – Ghee adds a great texture to the biscuits so do not skip it. It adds a melt in the mouth like texture. Oil – Use any cooking oil for deep frying or peanut oil. Salt – Salt is added to lift the sweetness.
Diamond Cutter
A specially designed cutter is used for making diamond cuts but you can very well use your pizza cutter or a normal knife to make this. The cutter has one side spoon and other side a wheel with designed edges, you can see that in my step wise pictures, now its widely available in markets which can be used for somas too. You can alternatively use pizza cutter or a sharp knife too.
How to make Sweet Diamond Cuts Step by Step
1.To a mixing bowl add 1 cup maida, 2 tablespoon powdered sugar, 1 tablespoon melted ghee, a pinch of salt. 2.Mix this well first then add water little by little. 3.Start kneading. 4.Knead to a soft non sticky dough like this. 5.Keep it covered for 10 – 15 minutes. 6.After 10 minutes knead it once again. 7.Roll into lemon sized balls and flatten it slightly. 8.Dust flour place a ball and roll into slightly thin disc like chapathi. It should be slightly thin like this. 9.First cut vertically using the diamond cutter or pizza cutter. Now cut horizontally to get diamonds like this. 10.Separate them. Do not worry if it sticks, when we fry in oil it gets separated easily. 11.Heat oil – check by adding a small piece, it it comes up immediately then oil is ready. 12.Add few at a time. Once it rises up flip over to fry evenly. 13.Fry until golden color and bubbles stops. 14.Drain excess oil and remove using a ladle. 15.Repeat to finish. Add 1/4 cup powdered sugar. 16.Toss it well until evenly coated. Store in airtight container and enjoy!
Expert Tips
You can use any roller knife / pizza cuter or even a simple knife to cut them into diamonds. Make sure you knead a soft pliable dough not too loose. If its too loose then add little maida to get a tight dough more like chapathi dough. While rolling dust flour to avoid sticking. You can use a metal spatula to separate and gather the diamonds. As sugar is added in the dough, the biscuits gets browned faster so make sure to keep in low medium flame while frying. You can even use half and half of wheat and maida flour. You can even add a tiny pinch of cardamom powder or any mild essence for extra flavor. I love it plain.
Serving & Storage
Sweet Diamond cuts keeps well in room temperature for about 10-15 days. Make sure you store in an airtight container.
1.I don’t have the cutter, Can I make diamond cuts?
Yes you can make diamond cuts without using the cutter, you can use a sharp knife to cut diamonds too.
2.Is it a must to add sugar to the dough?
No if you prefer you can skip powdered sugar to add in the dough and just toss it finally.
3.Can I coat the diamond cuts in sugar syrup?
Yes you can do it alternative to tossing it with powdered sugar. Take 1/3 cup sugar, 2 tablespoon water and heat it up until 1 string consistency then add the fried diamond cuts and mix it well.
