Gather these 3 kitchen items to make your homemade strawberry popsicles:

A blender: To blend the berries in. A food processor will do the trick, too.  Molds: Silicone or plastic popsicle molds are both great options, but I used mini paper cups this time because my proper molds were in use. They work perfectly. Popsicle sticks: I grab wooden sticks at my local dollar store. You can also get them at craft stores and online. Plastic or wooden spoons work, too.

Make Ahead and Storage

These strawberry popsicles can be made several days before you plan to serve them. This makes them a convenient option for parties or simply to have a healthy treat ready in the freezer.

Blend the ingredients

Combine the strawberries, honey or maple syrup, water, and lemon juice in a blender. Blend until the mixture is smooth.

Pour into molds

Fill the popsicle molds with the strawberry mixture, leaving a bit of space at the top to allow them to expand.

Insert sticks

Place the popsicle sticks into the molds.

Freeze

Transfer the molds to the freezer and freeze for 4-6 hours, or until the popsicles are completely solid.

Remove popsicles

To release the popsicles from the molds, run warm water over the outside of the molds for a few seconds. Store the popsicles in their molds or transfer them to an airtight container or freezer bag once they are completely frozen. This prevents them from absorbing any freezer odors and keeps them fresh. Properly stored, these strawberry popsicles can last in the freezer for up to 2-3 months.

Don’t overfill the mold: Filling the molds to the top doesn’t allow space for the mixture to expand as it freezes, leading to overflow and a mess in the freezer. Leave a small gap at the top of each mold (about 1/4 inch). Preventing sticking: If transferring to a container, separate each popsicle with parchment paper or plastic wrap to prevent them from sticking together. Quick release: To easily remove popsicles from their molds, briefly run the molds under warm water. This helps release the popsicles without breaking them.
