I’m notoriously averse to rules, but I do have three Mediterranean Diet principles: Eat with the seasons, use mostly whole foods, and above all else, share. It is such an essential part of living the Mediterranean way, and honestly a non-negotiable in Egypt where I grew up.  When you patiently wait for spring fruits and vegetables to reach their peak, you’re rewarded with the sweetest and most tender asparagus, perfect for making the creamiest Asparagus Risotto. Strawberries are firm yet beautifully ripe and juicy, just begging to become a crowd-pleasing Fruit Salad on a sunny Sunday barbeque.
