How to Make Sheer Khurma
In a medium pot, add ghee, almonds, pistachios, cashews, and dates. Roast for 2 to 3 minutes on medium-high heat stirring frequently. Add raisins, vermicelli, coconut, and poppy seeds. Mix well and roast for another 1 to 2 minutes as coconut and poppy seeds turn light brown (photos 1 - 4).
Stir in milk, sugar, and saffron. Then, cook on medium heat for 8 to 10 minutes as the sheer khurma comes to a rolling boil and the vermicelli is cooked soft. If needed add an additional 1 to 2 cups of milk and bring the sheer khurma to your desired consistency. NOTE: Sheer khurma will continue to thicken as it cools down and you can always add more milk if needed (photos 5 - 6).
Serving
Sheer Khurma can be served warm or chilled. I often prepare all the dry ingredients up to a week ahead and keep them refrigerated. Roasted dry ingredients can also be refrigerated for up to a week. Refrigerate cooked sheer khurma for up to 3 days and reheat in the microwave or stovetop.

I grew up in a small, yet close-knit town in India. My Dad has a huge social circle. Many of his friends celebrate Ramadan, fast from morning until sunset during this holy month. The last day which is Eid or as I remember calling it “Ramzan Eid” is a big celebration involving family, friends, and the community. We were always part of this wonderful celebration and got to enjoy a feast of exquisite foods. One of which is this ambrosial dessert Sheer Khurma.
Thin Vermicelli - I recommend using thin vermicelli (or roasted thin vermicelli) for this recipe. It is readily available in Indian grocery stores. If you have other thicker varieties like the bambino vermicelli, make sure to cook them until they are soft and tender. Dates - Although the traditional recipe uses dried dates I love the convenience of regular dates that can be sliced easily and also cook faster. If you prefer using dry dates, go ahead and slice them up, and use them. Milk - Use whole milk for a creamier texture or you can also use low-fat milk. Nuts - blanched and thinly sliced pistachios, cashews and almonds add a wonderful texture and aroma while making the dish visually pleasing Poppy Seeds - also known as “Khus Khus” adds a nice crunchy bite and flavor, if you don’t have poppy seeds skip them. Raisins - Light green, golden, or black raisins can be used Coconut - shredded unsweetened coconut adds wonderful texture and nutty flavor Saffron - a few strands add a beautiful golden hue and floral aroma and is often added to South Asian desserts
Variations
I do not add Chironji or Charoli to this recipe. Chironji seeds are small seeds tasting similar to almonds. Although delicious, they can be hard to find and they can go bad quickly. For me, it is hard to find the bad seeds in a bag of Chironji. A few times I have ruined the taste of my dishes with rancid Chironji, so I skip them. If you have good quality Chironji on hand, you can add 2 tablespoons to this recipe along with almonds. I have used pre-roasted thin wheat vermicelli noodles in this recipe. You can also use regular vermicelli and roast them separately or along with the nuts. You can also use thicker vermicelli if that is what you have on hand.

Sheer Khurma in Persian translates to ‘Sheer’ means milk and ‘Khurma’ means dates. Sheer Khurma is made using a special variety of fine vermicelli along with milk, dry fruits and nuts which makes it rich and delicious. This is a famous Eid dessert very quick to make but tastes soo good. Sheer Khurma is famous in parts of Central Asia and Afghanistan. Mughalai dishes are usually very rich so is Sheer Khurma with the addition of milk, dry fruits and nuts. We add condensed milk for richness and to add more creaminess to the dessert. Sheer Khurma Vermicelli
Sheer Khurma is made using a special variety of fine vermicelli. It is not the regular semiya / vermicelli we use for upma its more finer than that. Just pick up the finest vermicelli variety you can find in supermarkets.

Fine Vermicelli – Using fine vermicelli is a must for Sheer Khurma to get the traditional taste however regular vermicelli variety can also be used.Milk – Using full fat milk gives it a more creamy and rich dessert.Dry fruits, Nuts – I used a mix of nuts like cashew, badam, pista, dates etc.Flavouring – Rose essence, cardamom powder and saffron are used for flavouring the dessert.

Sheer Khurma Recipe Step by Step
1.Heat 2 teaspoon ghee in a pan add all the nuts and dry fruits fry until golden – 1 tablespoon each of cashews, almonds, pistachios, dates and 1/2 tablespoon raisins. Remove and Set aside. 2.In the same pan add 1/2 cup vermicelli and roast it. 3.Roast until golden. 4.Set aside to cool in a plate. 5.To a pan add 2 cups full fat milk, let it boil then simmer for 5 mins. 6.Then add fried dry fruits and nuts(reserve a tablespoon for garnish) and roasted vermicelli. 7.Mix well and cook.As its fine vermicelli gets cooked in just 2 mins so keep an eye. 8.Now add 1/2 cup condensed milk. If you want to replace condensed milk with sugar then add 1/3 cup sugar. 9.Add 5 strands saffron and 1/4 teaspoon cardamom powder. 10.Add 1/4 teaspoon rose essence. Mix it well. 11.Let it simmer for few mins until slightly thick and creamy. 12.Switch off and serve! Sheer Khurma ready!
Expert Tips
The kheer thickens with time so switch it off accordingly.Add chiroli nuts if you like.You can skip condensed milk and add 1/3 cup sugar too.Ghee and malai will float on top at the final stage when you switch off.But don’t make it too thick as after cooling it may be become very thick.If it gets thick after cooling add 1/2 cup boiled hot milk to thin it while serving.If planning to serve it chilled then switch off when it is slightly runny itself as it tends to thicken a lot when refrigerated.
Variations
You can add any dry fruits and nuts you like.Replace condensed milk with 1/3 cup sugar. Condensed milk adds more creaminess and richness to the dessert.If you do not have rose essence you can add rose water or kewra water too.I added saffron as such in hot milk itself, but you can soak in hot milk and add it too.
Serving and Storing Suggestion
Serve with nuts and dry fruits garnished. Sheer Khurma can be served hot, warm or chilled as per your preference. If chilling the dessert make sure it is slightly thin as it becomes thick after cooling down. You can store this in fridge for 2 days, while serving bring it first to room temperature then heat it and serve.
