Rose Milk Ice is one of the most favorite and popular popsicles of 80’s kids and I am no exception. I have enjoyed this during my school days it used to be in triangle form and I wanted to recreate the same taste for my kids to enjoy also to post it here. About Rose Milk Ice
Rose Milk Ice is rose flavored milk poured into ice molds and freezed. It is basically rose milk freezed and made into popsicles. We fondly call it as rose milk kuchi ice meaning rose milk in a stick(kuchi). 80’s and 90’s kids do you remember the triangle rose colored kuchi ice. I am so in love with it. I wanted to recreate the same taste and look – tastewise I was spot on as I could sense the same feel as a school kid when I had a lick but couldn’t reach out to triangle popsicle molds. We used to be crazy after these rose milk kuchi ice during our school days. We used to treat us with these rosemilk popsicles on the last day of our school closing day each term it became more like a tradition. Each year my birthday would fall on the last day of quarterly exams and the treat would be this popsicles for my friends. I have tasted both the triangle shaped and rectangle shaped rose milk popsicles. These are a real treat to your kids for this summer and I am sure you will love this too!! Though we have expensive rich creamy ice creams available in markets these days some taste lingers in our memories still and this is one most favorite one for me.

Rose Milk Ice Ingredients
Milk – Use full fat milk for best results. Sugar – Use white granulated sugar. I used raw white sugar free from sulfur hence the dull color. Rose Milk Essence – Use fresh natural rose essence for best taste. It has both rose essence and color so add only few drops. Rose Syrup – You can either use rose milk essence or use rose syrup.
How to make Rose Milk Ice step by step
Using Rose syrup
1.To begin with add milk to a sauce pan. 2.Let it boil. 3.Simmer for 3-5 mins. 4.Cool down then pour in a jug. 5.Add sugar. 6.Add rose milk essence. 7.Mix it well. Set aside. 8.Pour the mixture into popsicle molds or any teacups till 3/4th of the rim. 9.All filled and ready. 10.Cling wrap it with aluminum foil,Carefully prick with a knife then insert ice cream sticks.Alternately you can even close it with your popsicle mould lid itself. 11.Freeze it for at least 8 hrs. 12.Then take it out and carefully dip the popsicle mold in water. 13.Remove foil first. Carefully pull out the popsicles. 14.Serve chilled! Rose milk kuchi ice or popsicles ready! Enjoy Rose Milk popsicles!
Using Rose syrup
1.You can either add rose essence and food color OR add rose syrup. Boil milk cool down completely then chill it. 2.For 2 cups milk add 1/4 cup rose syrup to it. 3.Mix it well. Now repeat from step 8 and proceed. Enjoy the popsicles!
Expert Tips
Don’t have a popsicle mold?! don’t worry use paper cups or even steel tumblers cling wrap with aluminium foil insert ice cream sticks and freeze it. It demolds easily or you can even cut the cups to get the popsicles out. Add rose essence, red pink food color or use rose syrup to make rose milk. Add little more sweetness than we add for drinking. Freezing for at least 6 hrs is required but I kept it overnight. For easy demolding – show the popsicle molds in warm water, then pull the stick out slowly to get the ice pops clean.
Serving & Storage
Serve it immediately once you de-mold. You can freeze the popsicles for up to 2-3 days. Serve it as such or rose syrup and serve. You can freeze the popsicles for about 3-4 days.
