Paneer Fried Rice is a great Indo-Chinese fusion dish. Paneer has a good texture and absorbs the flavors from other ingredients added along. So I add in a lot of vegetables to make paneer fried rice more colorful, flavorful and tasty. This paneer fried rice comes out so good that you will find it better than the restaurant taste. Mittu loves both paneer and fried rice so paneer fried rice is obviously her favorite. Hubby can have fried rice even daily, yes he is crazy after any fried rice recipes and his staple order in restaurants will be egg or veg fried rice. I like fried rice too but seeing the amount of oil they use in restaurants and while eating with hands you can feel the oil and I feel really guilty to eat fried rice at restaurants so I limit myself with my ever favorite Naan/ Roti with any gravy. I usually find making fried rice easy than any other South Indian meal, as once the chopping part is done your fried rice will be ready in no time so when there is demand for fried rice at home I never miss it.

Paneer Fried Rice with Chilli Paneer Gravy
Paneer Fried Rice Ingredients
Rice – You can use long grained basmati rice, regular basmati rice or even jasmine rice. I prefer basmati rice the best for fried rice. Paneer – You can use homemade paneer or store bought paneer. Make sure to use fresh paneer. Oil – I mostly use olive oil however any cooking oil can be used. Vegetables – I use carrot, capsicum and cabbage along with paneer. Sauces – Soya sauce is the main sauce used here. You can even add chilli sauce if you prefer. Flavorings – Garlic and pepper adds more flavor to this dish. Spring onion – Instead of regular onion, spring onion is added. Do not skip spring onion as it is one of the flavorful ingredient for fried rice. Sugar, Salt – Salt is added for taste and sugar to balance all the flavors.
How to make Paneer Fried Rice Step by Step
1.To a wok or pan heat 1 tablespoon olive oil – add 1 cup paneer(small cubes). Sprinkle little salt and toast it. 2.Toast until golden, transfer to a bowl and set aside. 3.Add 2 tablespoon olive oil – add 1 and 1/2 tablespoon garlic (finely chopped). Saute until golden. 4.Add 1/4 cup carrot, 1/4 cup green capsicum, 1/4 cup yellow capsicum and 1/4 cup cabbage. 5.Saute in high flame for 2 minutes. Add salt to taste, 1/2 teaspoon pepper powder, 1/2 teaspoon sugar and 1/2 teaspoon soya sauce. 6.Saute in high flame for 1 minute. 7.Add toasted paneer. 8.Give a quick mix. 9.Then add 3 cups cooked basmati rice. 10.Mix it well then add 1 teaspoon crushed pepper and 1 tablespoon spring onion. 11.Toss in high flame for a minute. Switch off. Paneer fried rice is ready!
Expert Tips
Add more vegetables to make it wholesome and healthy. Don’t skip spring onions as it gives a good amount of Chinese flavor to the fried rice. You can add 2 tablespoon onion while sauteing the vegetables. You can even add 1/2 teaspoon green chili sauce. You can even crumble or grate the paneer and add it but in that case you will have to add it raw. I prefer toasting cubes and adding. Sauteing the veggies in high flame gives a nice smoky flavor and also retains its crunchiness without the raw smell. I soaked basmati rice for 15 minutes then pressure cooked for 1:1.5 ratio(rice:water) for 2 whistles in medium low flame. Make sure to fluff the rice and spread it with little olive oil to make the grains separate.Allow it to rest at least for 30 minutes. I don’t use ajino motto in my cooking, but if you prefer you can add a pinch at the final stage to get the exact restaurant flavor.
Serving & Storage
You can serve paneer fried rice with any manchurian sauce or gobi / baby corn manchurian etc. Any chili dishes will go well with fried rice too. Chilli Paneer or Chilli Baby Corn is the best combo for Fried Rice. Fried Rice keeps well in room temperature for a day and in fridge for 2 days.
1.Which rice is best to use?
Any long grained rice would be best to use for fried rice. I use basmati rice, you can use jasmine rice or other long grained rice varieties. Make sure to cook rice with grains separated.
2.My paneer turns out hard, what should I do?
Firstly you can soak paneer in hot water for 15 minutes then drain water and use the paneer. This way paneer stays soft in any dish it is added.
3.Can I skip vegetables?
Yes you can skip vegetables and add just paneer, spring onion and capsicum too. However with vegetables paneer fried rice tastes flavorful and wholesome.
