Pin Milk tea is a special tea made with black tea and milk. This tea is usually a part of Hong Kong lunch. Hong Kong style milk tea orginates from British practise where black tea is served with milk and sugar. But here instead of sugar we use condensed milk and evaporated milk. Also they use a special tea strainer made of sack cloth bag. It is also called as “silk stocking milk tea” which originates from the appearance of the sackcloth tea leaf filter bag. Hong Kong style milk tea uses several types of tea varieties to make black tea. The proportion of each tea is considered to be a secret of many commercial vendors. One of the variation uses condensed milk and evaporated milk instead of regular milk to give it a richer taste and feel. Source Reference : Wikipedia It is not easy to find evaporated milk here in India, so I thickened full fat milk for a while then strained and used it. You can serve this milk tea chilled or warm.
