What is Masala Oats?
Masala Oats is oatmeal cooked with vegetables and spices in Indian style. Masala Oats is made by simmering vegetables with oats and spices. Oats along with vegetables and spices makes a tasty and healthy meal. You don’t need any side dish for this dish. You can serve with plain curd or papad. Oats has become a significant ingredient in our kitchen these days and making it in a tastier way is our responsibility. Masala Oats is one such recipe where oats can be relished. Masala Oats tastes best when hot, so savor it immediately after cooking. There are many brands selling ready to cook masala oats but do try this homemade version before you buy them as it is more healthy without any additives and preservatives. With minimum effort you can get this done in 25 minutes. Oats tastes plain just like any other cereal grain rice & wheat. The addition of masala and spices matches our taste buds and hence adding it to oats makes it a tasty meal. I have added masala that we use in our regular every day cooking in this recipe – Garam Masala powder, Red chilli powder, Turmeric powder & Ginger Garlic paste all in formulated quantities for a healthy & tasty Masala Oats. Oats has fiber content which helps in reducing bad cholesterol and maintain weight. It also has low glycemic index which means it is good for keep blood sugar levels in control. With the addition of veggies it gets more healthier and better!
Steel cut Oats – Rolled Oats – Quick Oats
Steel Cut Oats are the coarse unprocessed oats that are cut using steel blades after removing the husk / hull. They are grainy and takes time (15 to 20 minutes) to cook or the oats has to be soaked and cooked just like our rice. Rolled Oats are oats that have gone through steaming & flattening process, soft in texture and could be cooked in 3-5 minutes. Quick Oats are further processed oats to decrease cooking time. The Oats that we get from store in India are usually quick oats or rolled oats and needs a cooking time of 3-5 minutes based on the recipe. The type of oats will be clearly printed on the cover of the oats pack.
Masala Oats in Instant Pot
Select saute mode for 15 minutes. Heat oil, temper cumin seeds. Saute onions . Add spices and mix well. Add veggies of your choice, oats and 2.5 cups water. Now cook in high pressure for 8 minutes. Let the pressure release naturally. Open the lid, garnish with coriander leaves and enjoy hot masala oats!

Masala Oats Ingredients
Oats – If the oats is rolled or quick cooking type this recipe can be followed as it is. If you are using steel cut oats, soak them for an hour before cooking and cook for 10-15 minutes in the prescribed recipe or you can follow Instant Pot method. Vegetables – I have used carrots, peas & tomato for this recipe. Veggies are your choice – you can add it as per your choice. Beans, broccoli, cauliflower, beet are other vegetable choices. Tempering – Cumin seeds is added for tempering. I usually temper it in cooking oil itself but if you wish you make it more flavoring by tempering it in ghee. Garnish – Add a lavish sprinkle of coriander leaves at the end for a more flavorful masala oats.
How to make Masala Oats Step by Step
1.Heat 2 teaspoon oil in a pan – when it is heated add 1/2 teaspoon cumin seeds let it splutter. 2.Add 1/4 cup onion, 2 tablespoon tomato and 1/2 teaspoon ginger garlic paste. 3.Saute until it shrinks and tomatoes turn mushy. 4.Now add 1/4 cup vegetables I added carrot and frozen peas. Add 1/4 teaspoon turmeric powder, 1/2 teaspoon red chili powder, 1/4 teaspoon coriander powder and 1/2 teaspoon garam masala powder along with required salt. 5.Give a quick saute. Saute for 2 mins. 6.Add 2 and 1/2 cups water, give a quick mix . 7.Let it come to a boil. 8.Cook covered until the veggies are cooked soft. 9.Now add 1/2 cup oats after checking the vegetables(if they are cooked soft). 10.Give a quick mix. 11.Let it cook for a minute. 12.Starts to boil, keep cooking. 13.Turns thick more like porridge consistency. 14.It should be flowing and sticky. Switch off at this stage as it may turn thick after cooling down. 15.Finally garnish with 1 tablespoon coriander leaves. 16.Give a quick mix and enjoy it hot! Serve masala oats hot!
Expert Tips
You can use vegetables of your choice. Adjust water according to the oats variety. Adding the vegetables and spice powders even before the oats is cooked helps in blending the flavors well. You can also pressure cook the vegetables, oats together with the spice powders. Variations – Adding cashews will make Masala Oats richer and crunchier. Garlic can be minced and added for garlic flavors. Adjust quantity of veggies based on your choice. Add eggs to make Egg Masala Oats
Serving & Storage
Masala Oats does not need accompaniment as it is a wholesome complete meal. It is ideal for breakfast, dinner and evening time for kids back from school. Masala Oats is best tasty when hot, so savor it immediately after cooking. If there are leftovers, refrigerate it or if it had turned cold, just sprinkle water and reheat in tawa or in microwave.

2.Is Masala Oats a porridge or kichadi?
Masala Oats can be cooked like a porridge or a kichadi consistency depending on the amount of water added and cooking time. The recipe published here is for porridge consistency. If you wish to make in kichadi consistency add little less water, do not mash the veggies and cook for extra 2-3 minutes. Also if you allow the masala oats to cool, it will get thickened to kichadi consistency. However the taste is best when consumed hot.
