Masala Milk is one of my favorite drinks as it is so soothing and tasty. I love to have it hot but it can be served chilled to as per your preference. Masala Milk is usually preferred during winter as the dry fruits and nuts keep the body warm.

What is Masala Milk?

Masala Milk is spiced milk made by simmering milk with nuts, aromatic spices powder along with sweetener and flavored with saffron, nutmeg. It is one of popular drinks during winter as the spices are believed to have warming properties. It’s a comforting and flavorful beverage that can be enjoyed on its own or paired with your favorite snacks. I prefer to toast the nuts a bit before grinding as it helps in grinding easily and gives a great flavor to the drink. The first time I tasted Masala Milk was at a restaurant in Chennai. After having a mild dinner I wanted to have something hot that is when this Masala Milk in the menu card caught my attention. It was very mild flavored with chopped nuts and saffron. After few days I tried it at home and it came so good. Since then had been making masala milk often especially during chill nights. This Masala Milk is an instant version with dry roasting nuts and powdering it. You can double the recipe and make the masala milk powder to store it. Masala milk, with its blend of spices and milk, offers various health benefits including warming properties, boosting immunity, gives a good night sleep, rich in nutrients, anti-oxidants etc.

Masala Milk Ingredients

Milk – Use fresh full cream milk for best taste and creaminess. Nuts – Cashew, Almonds and Pistachios are used for Masala Milk. Cashews are mainly added for creaminess. Spices – Cinnamon, Cloves, Cardamom and Pepper are used. Turmeric – It is a common spice in India which is commonly used in powder form. Sweetener – I have used regular white sugar, you can use cane sugar or brown sugar too.

Masala Milk Recipe Step by Step

Preparing Nuts Powder

2.Roast for 2-3 mins. Take care not to burn the nuts and spices so roast in low flame. 3.Add a tiny pinch of saffron. Switch off. 4.Give a quick mix and remove from flame. 5.Cool down completely then transfer to a dry mixer jar. 6.Grind it to a powder. Coarse or fine it is your preference. 7.I usually make it semi fine. Set aside.

Boiling Milk

8.To a sauce pan – add 2 cups milk. 9.Let it come to a rolling boil. 10.Swirl the pan and let it simmer for a min.

Preparing Masala Milk

11.Now add 2 tablespoon sugar. Adjust according to your sweet preference. 12.Add 1/4 teaspoon turmeric powder. 13.Simmer for a minute. 14.Then add nuts powder. 15.Add chopped nuts. 16.Add grated nutmeg. 17.Give a quick mix so that no lumps are formed. 18.Simmer for 2-3 mins. Switch off. 19.Pour into serving cup. 20.Add chopped nuts, saffron as garnish. Serve hot!

Expert Tips

Don’t miss the spices as its the main ingredients in masala milk. You can add palm crystal sugar replacing sugar for a more healthier version and it is best to have during cold and running nose. You can even grind the nuts to a coarse/fine paste and add it. Always use fresh milk preferebly full cream milk for best taste. I love having it hot, but if you prefer you can chill the drink and serve. If you prefer a more spiced version then you can add 10 whole pepper corns.

Serving & Storage

You can serve Masala Milk hot or cold. Serve it with chopped nuts and saffron as garnish. Masala Milk is preferred to consume fresh. It keeps well in room temperature for around 6-8 hrs depends on the freshness of milk. If refrigerated it keeps well for 2 days.

1.When can I have Masala Milk?

There is no specific time to have Masala Milk but it gives a good nights sleep when had after dinner.

2. Can I make the Masala Milk powder and store?

Yes you can make it well ahead and store it for upto 2-3 weeks in fridge. But make sure to grind it to a powder form without nuts releasing oil.

3.Is sweetener mandatory?
