What is Mango Sago?

Mango Sago is a Cantonese dessert that originated at a renowned restaurant at Hong Kong, Lei Garden Back in the mid-1980’s the head chef came up with creamy mango tapioca pudding made with coconut milk. Later there came so many variations to it according to one’s preference and liking. Mango Sago is a popular dessert made using mango, tapioca pearls also known as sago, milk, condensed milk and sugar. Originally it was made with coconut milk but I’ve used milk and condensed milk. With such easy and humble ingredients if you can make an exotic dessert, then its a great win. Since the invention this mango sago has spread its popularity across Asia. It is also found in many boba shops and Asian dessert parlors across the world. Trust me , this pudding is mild yet rich in taste that you cannot stop with one spoon.

Mango Sago Ingredients

Mango – Choose juicy sweet mangoes so that we can reduce sugar. I used alphonso mangoes. Sago – You can choose to use nylon variety of sago or the white ones as I’ve used. Make sure to cook it perfectly. Condensed milk – Condensed milk adds richness to the dessert. Sweetener – I have used granulated white sugar. You can try with brown sugar too. Milk – Use full cream milk for best results. Always use boiled, cooled milk.

How to make Mango Sago Step by Step

1.Take 1/2 cup sago in a bowl. Rinse it well first then add water till immersing level. Do not add more water say 1/4 cup or little more would be enough. 2.Soak it for 1 hour. 3.After one hour it should fluffy like this. Set it aside. 4.To a pot add 3 cups water and let it boil. 5.Add sago and let it cook in medium flame. 6.Cook until its transparent. It takes 10-12 minutes depends on the sago variety. 7.Transfer it to a strainer. Rinse with water first to avoid overcooking. Strain and set aside. 8.Take 2 medium sized mangoes chopped roughly along with 3 tablespoon sugar and 1/2 cup milk. 9.Blend to a fine puree. This puree will be around 1 and 1/2 cups. 10.Add 1/4 cup condensed milk to it.
11.Add cooked sago and 1/2 cup milk. 12.Mix it until well blended. Add more milk if needed to adjust the consistency. 13.Chill it and spoon it in dessert bowls, garnish with chopped mangoes. Serve chilled!

Expert Tips

Mangoes – I used alphonso mangoes. You can use neelam mangoes too. Any fiber less mango suits best. Sago variety – You can choose white sago variety or nylon sago. White sago variety needs soaking but nylon sago needs no soaking you can rinse and add it as such. Soaking sago – Take care while adding water to soak sago, this is a very important step. If you add more water then it will become mushy. Milk – Use boiled, cooled milk. Use full cream milk. Adjust consistency of the pudding by adding more milk. After adding sago it thickens so adjust the consistency accordingly. You can even add 1/4 cup coconut milk for extra flavor. Chilling – Chill the pudding then while serving top it up with chopped mangoes and serve.

Variations

You can cook sago first then mix it with milk and condensed milk and set aside. Now to the serving cup add sago mixture then on top of it add mango puree to have a layered mango sago dessert. Cook sago, mix it with milk and add it to the serving glass top it with chopped mangoes and serve chilled. Instead of milk you can use fresh coconut milk too.

Serving & Storage

Mango Sago can be served chilled with a garnish of chopped mangoes. This dessert keeps well in room temperature for 1 day and 2 days in fridge. This pudding can be made well ahead and stored in fridge for parties and get together.

1.What can I replace milk with?

You can replace milk with coconut milk for vegan option. Use thick fresh coconut milk for best taste.
