About Mango Panna Cotta
Panna Cotta is a popular Italian dessert made using cream, milk, sugar and agar agar or gelatin, vanilla essence. ‘Panna Cotta’ means cooked cream in Italian. Panna cotta made with milk and cream is the classic version but can be made using different flavors and fruits. This Mango Panna Cotta can be made as whole layered dessert or with 2 layers as I have shown here. It is very attractive to see the 2 set layers and tastes divinely delicious. You can either set panna cotta in dessert bowls or pudding bowls to un-mold them. The ingredients needed to make Mango Panna Cotta is simple and minimal. Agar agar or china grass beautifully sets pudding and I love to try different pudding varieties with it. You can make in individual glasses or set it in silicon cups too. Generally gelatin is used to set panna cotta but the vegetarian version uses agar agar. Agar agar is a vegan ingredient which is used for setting puddingd. jellies, pana cotta etc. It is obtained from a particular kind of algae. It acts as an egg substitute in puddings and gelatin substitute in jellies, panna cotta etc. You get agar agar in strands forms which we need to cut into small strips or powder and use them. But now agar agar powder is easily available online and it easily sets puddings.

Mango Panna Cotta Ingredients
Mango – Choose juicy sweet mangoes. You can use alphonso or neelam variety mangoes. Milk – Use full cream milk for best results.Low fat or toned milk will not give the creamy texture. Cream – Fresh cream is used here. Make sure to buy good quality fresh cream without water content. You can use heavy cream too. Sweetener – Granulated white sugar is used for panna cotta. Check the sweetness of mangoes and adjust sugar accordingly. Agar Agar – Agar agar or china grass is used to set the pudding.
How to make Mango Panna Cotta Step by Step
Preparing mango layer
1.Peel the skin from 2 medium sized mangoes and chop hem roughly. Blend to a thick puree without adding water. Measure 1 cup puree and set aside. 2.To a sauce pan add 2 tablespoon water along with 1/2 teaspoon agar agar powder. 3.Whisk it well until it dissolves completely. 4.Let it boil for few seconds. 5.Now 1 cup mango puree along with 2 tablespoon sugar. 6.Whisk well and cook for 1 minute until sugar dissolves completely. Switch off. 7.Pour into dessert bowls or pudding molds and let it set in fridge for 2 hours.
Preparing milk cream layer
9.After 2 hours now make the second layer. To a sauce pan add 1/2 cup full cream milk(boiled). 10.Add 1/2 cup fresh cream to it. 11.Add 3 tablespoon sugar. 12.Whisk it well until sugar dissolves completely. 13.Now add 1/2 teaspoon agar agar powder. 14.Whisk it well until it dissolves. Cook for a minute or until it starts to boil at the sides. Do not let it boil. 15.Switch off and now add 1/4 teaspoon vanilla essence. 16.Mix it well. 17.Now remove the bowls from fridge and pour the second layer. Make sure the mango layer is set fully before pouring. Set in fridge for 2 hours. 18. After 2 hours it is set. Now add chopped mangoes. Serve chilled!
Setting the Panna cotta
19.For getting a slant layer first place the glasses in muffin pan in a slightly slant position like shown here. 20.Now pour the mango layer first. Set it for 2 hours in fridge. 21.Once the mango layer is set – add the milk layer. Add chopped mangoes and serve chilled!
Expert Tips
If using agar agar strips then cut into small pieces and dissolve it in water then add the mango puree. Take care to dissolve the strands completely. Agar agar powder is easy to dissolve in any liquid so I recommend using it Panna cotta needs at least 4 hours of setting time so plan ahead. Grease the bowls well if you are planning to unmold and serve. Do not add more agar agar powder than mentioned as it may make the panna cotta firm.
Serving & Storage
Mango Panna Cotta can be served with fresh chopped mangoes or can be served as such too. Mango Panna Cotta keeps well in fridge for 2 days. I would not recommend keeping in room temperature as this dessert tastes best when chilled.
1.Is mango pudding and mango panna cotta same?
No pudding and panna cotta are different. Pudding is more firm and not so rich like panna cotta. Panna cotta is very rich and the texture is more goey and creamy.
2.Can I make vegan mango panna cotta?
Yes you can make vegan panna cotta by replacing milk with any plant based milk and fresh cream with coconut cream.
