About Mango Kulfi
Kulfi is an Indian frozen dessert traditionally made by simmering milk for a long time till the milk solids form. The traditional method involves slow cooking and reducing milk. Kulfi comes in various flavors and mango kulfi is one of the popular and on demand flavors. Do try it and enjoy them when mangoes are in season. Mango Kulfi is a super rich and creamy frozen summer treat made with milk, mangoes and condensed milk as main ingredients. The 2 recipes I have shared here for mango kulfi comes out super creamy and delicious. Indian summers are never complete in my household without making kulfi – this year its raining mango desserts and this mango kulfi was relished by all at home. Mangoes gives natural creaminess and with thickened milk this mango kulfi tastes absolutely delicious. This is such a silky smooth, creamy and rich frozen dessert that everyone would love. Mangoes are my kids absolute favorite so this mango kulfi is their most favorite dessert. They always ask for kulfi often especially during summer.

Mango Kulfi – 2 Versions
I have shared 2 versions of Mango Kulfi
Mango Kulfi – This is the classic version made by thickening milk until reduced then mixing it with mango pulp, flavorings then freezing it. No cook mango kulfi – If you are pressed for time then you can make this no cook mango kulfi, its just blending the ingredients together and freezing them.
Mango Kulfi Ingredients
Mango – Choose juicy sweet mangoes so that we can reduce sugar. I used alphonso mangoes. Milk – Use full cream milk for best results. Always use boiled, cooled milk. Sweetened condensed milk – Condensed milk adds richness and sweetness to this dessert. Flavoring – Saffron and cardamom powder are best combo with mangoes. Nuts – You can add chopped nuts in the mango mixture and freeze it too or garnish it after removing the kulfi.
How to make Mango Kulfi Step by Step
1.Take 2 medium sized mangoes chopped roughly along with 1/4 cup condensed milk+2 tablespoon condensed milk, a tiny pinch saffron and 1/4 teaspoon cardamom powder. 2.Blend it to a fine puree and set it aside. 3.Boil 2 and 1/2 cups full cream milk. 4.Let it simmer in low flame. 5.Scrape the sides, collect the milk solids and add it back into the milk. 6.Repeat until the milk is reduced to almost half. Keep stirring every now and then to avoid burning at the bottom. 7.Now milk is reduced so switch off. 8.Cool down completely. 9.Now add the mango puree. Do not add the puree before milk cools down as there are chances for milk to curdle if you add puree to hot milk. 10.Mix it well with a whisk. 11.Pour into kulfi molds or you can use small tumblers too. 12.Cover with aluminium foil and prick with a knife. 13.Insert ice cream sticks and freeze for minimum 8 hours. 14.I froze it overnight so this is the next day. Remove the foil first then dip the outside of the mold in water. 15.Gently twist the ice cream stick and pull out. 16.Mango kulfi is ready! Garnish with nuts and serve! Serve chilled!
No cook Mango Kulfi
No cook instant mango kulfi yes you heard it right. Except for boiling milk it needs no fire at all. I tried it with condensed milk and fresh cream and it came super good.
Ingredients
1 medium sized mango 1/2 cup milk (boiled, cooled) 1/4 cup condensed milk 1/4 cup fresh cream a tiny pinch saffron 1/8 teaspoon cardamom powder
Step by Step
1.To a mixer jar take 1 medium sized mango(skin peeled & chopped roughly) along with 1/2 cup milk(boiled & cooled), 1/4 cup condensed milk, a tiny pinch saffron and 1/8 teaspoon cardamom powder. 2.Blend this first until smooth. 3.Add 1/4 cup fresh cream. 4.Just blend for few seconds until combined. 5.Pour into kulfi mold. 6.Cover with aluminium foil, prick with knife and insert ice cream sticks. Freeze for minimum 8 hours. 7.Show the mold under running water, remove the foil and gently pull the kulfi. 8.No cook Mango kulfi is ready!
Expert Tips
Mangoes – Choose ripe mangoes or any juicy mango type, alphonso mangoes are best. Milk – I recommend using full cream milk , don’t use skimmed or low fat milk. Whole milk or full cream has more fat which results in creamy kulfi. Sweetened condensed milk – Adjust condensed milk quantity according to the sweetness of mangoes. Nuts – You can soak 5 each of cashews, almonds and pistachios grind it and add it to the mango mixture. Kulfi mold – Don’t have kulfi mould?! don’t worry you can use small steel tumblers cling wrap aluminium foil, insert ice cream sticks and freeze it. Others – Cornflour mixed with milk can be added to thicken milk faster. But I don’t prefer adding it as it gives a slightly pasty texture while eating so I skipped it and reduced the milk until thick and creamy.
Serving & Storage
Serve it immediately once you remove. You can freeze the kulfi for up to 2-3 days. Serve it as such or with chopped pistachio. You can freeze mango kulfi for about 3 days.
1.How to remove kulfi from mold easily?
For easily removing the kulfi from mold – show the molds in running tap water, then pull out the stick slowly to get the ice pops clean. Alternatively you can dip the outside of the mold in water and then remove.
2.Can I use ready made mango pulp?
Yes you can use ready made mango pulp but adjust condensed milk accordingly as ready made mango pulp already has sweetness in it. If using mango pulp use around 1 cup pulp for 1 cup reduced milk.
3.Can I use sugar instead of condensed milk?
Yes you can use sugar but it makes the kulfi mixture a bit runny so you need to thicken further. Condensed milk gives thickness and creaminess to the kulfi.
