About Mango Jam

Mango Jam is a delicious spread made by simmering mango pulp with sugar and lemon juice. This mango jam recipe is very easy to make resulting in a tropical flavored natural fruity jam without any preservatives. Mango Jam can be used as a spread for toasts, dosa, chapathi etc or can also be used as a preserve when fresh mangoes are not in season. This mango jam works great for milkshakes, juices and smoothies too. Usually jam uses pectin which makes it thick and jelly like in consistency. But homemade jam can be made easily with just 3 ingredients mango, sugar and lemon juice without pectin and other artificial flavorings and preservatives. Homemade jams are a great way to preserve fresh seasonal fruits. As mango season is going to end soon I made a bottle of homemade jam to enjoy for a while. This mango jam is one of the best jams that I have ever made, kids approved too.

Store bought vs Homemade

Store bought jams are loaded with sugar, artificial colors and preservatives. Homemade jams can be customized according to our preference, also uses less sugar no preservatives or additives. So I always prefer homemade jams and make a batch when fresh fruits are in season. Homemade jam tastes like just eating the mango pulp while sugar and lemon juice acts as a natural preservative also adds tangy taste to the jam. Homemade jams are fresh and refreshing as it uses real fruits.

Mango Jam Ingredients

Mango – Use ripe sweet mangoes. If you cannot source fresh mangoes you can use frozen mangoes too. Thaw the mangoes and grind it to a fine puree. Sugar – Use granulated white sugar which works best for this jam. Adjust sugar according to the sweetness of mangoes but do not reduce a lot as sugar is one of the main preservative used here. Lemon – Lemon juice acts as a natural preservative and adds a tangy taste to the jam. It also prevents crystallization of sugar.

How to make Mango Jam Step by Step

2.Puree it fine and set aside. Measure 1 heaped cup mango puree. 3.To a pan – add the mango puree. 4.Cook for 5 minutes keep stirring. 5.Add 3/4 cup sugar to it. 6.Mix it well. 7.Let it boil, stir on and off without letting it burn at the bottom. Cook in low medium flame. This is after 10 minutes. 8.Try by adding a spoon of the jam to a plate, slant the plate it – if it drips down like this it shows you need to cook more. 9.Keep cooking until thick like jam consistency, turns glossy and transparent like this. This is after 15 minutes in total. 10.Now check and see by pouring it in a plate and sliding it down, it is thick and does not drip down. This is perfect. 11.Add 1 teaspoon lemon juice. 12.Cook for 2 minutes and switch off. 13.The consistency is thick but flowing. It thickens further after cooling down so do not overcook. 14.Transfer to a sterilized glass jar. 14.Spread on toast or plain bread and enjoy! 15.Keeps well in room temperature for 5 days and in fridge for about a month. 16.See the consistency – this is after a week of storing the jam in fridge. Enjoy homemade jam with toast!

Expert Tips

Mango – Choose ripe sweet juicy mangoes. Alphonso works best however you can use other sweet variety mangoes too. Sugar – I have only tried with white granulated sugar so not sure whether brown sugar or any other sugar will work for this jam. Lemon – I usually add lemon juice only at the last stage once almost the jam consistency is reached. Cooking – Cook the jam in low medium flame and keep stirring to avoid burning at the bottom. Use a heavy bottomed pan for making jam. Flavoring – You can add 1/4 teaspoon cardamom powder or few strands of saffron while cooking to have a flavored jam of your choice.

Serving & Storage

Mango Jam keeps well in room temperature for 5 days and in fridge for about a month. Mango Jam can be used as a spread for toasts, bread, chapati, dosa etc or can be used as a preserve in making milkshakes / smoothies when mangoes are not in season.
