Kashmiri Kahwa is a souful warming drink popular in Kashmir. It is made using whole aromatic spices which includes cinnamon, cardamom along with green tea, saffron and garnished with chopped nuts.

Kashmiri Kahwa is very comforting especially during winters. As the temperatures are very low in Kashmiri making the weather cold and snowy this Kashmiri Kahwa is a very popular warming drink there. Kashmiri Kahwa or Kashmiri Tea is also known as qehwa, kehwa or kahwa. There are many green tea varieties and Kashmiri Kahwa is one of the green tea variety I would love to have during winters. There are Kahwa premade tea mixes available in the market where in all the whole spices saffron are all mixed with green tea and is sold. Personally I feel making from the scratch is more refreshing than the ready tea mixes available. Traditionally kahwa is made in a copper kettle known as samovar. But in our homes you can make kahwa in regular sauce pan itself. Sometimes milk is added to kahwa to serve it for elderly sick people. Kashmiri Kahwa Ingredients

Green Tea – Use good quality green tea for a great flavour. You can also omit green tea if you wish too. Spices – The main whole spcies used for kahwa are cinnamon and cardamom. Some kahwa recipes use cloves also. Saffron – Use good orginal saffron as it is the main ingredient which gives flavour to the tea. I had saffron bought from Kashmir so used it. Sugar – Use granulated white sugar for best taste. However you can use cane sugar too. Garnish – You can use chopped almonds and also dried rose petals if you like.

Kashmiri Kahwa Recipe Step by Step

1.To a mortar and pestle add 2 cardamom and one 1 inch cinnamon. Crush it roughly adn set it aside. 2.Chop 5 almonds into small bits and set aside. 3.To a sauce pan add 2 cups water. Once it starts to boil add crushed items along with 10 strands saffron. 4.Give a quick mix. 5.Boil for 10 mins. 6.Boil in low medium flame keeping it covered for the flavours to stay intact. 7.After 10 mins if you see you can see a deep yellow color infused with a great aroma of the spices steeped in. 8.Add 2 teaspoon sugar. Adjust according to your preference. 9.Give a quick mix. Switch off and remove from flame. 10.Now add 1/2 teaspoon green tea leaves. You can add 1 teaspoon if you want a strong tea flavour. 11.Keep covered for 5 mins for the tea to steep in the flavours. 12.Strain and discard the remains. 13.Kahwa tea is ready! 14.To the serving cup add chopped nuts first. 15.Pour in hot kahwa. 16.Garnish with saffron strands and chopped almonds. Hot Kashmiri Kahwa is ready!

Expert Tips

You can serve Kahwa without sweetner too its purely your preference. Traditional Kahwa has sweetner but if you prefer you can skip it. I usually add green tea after switching off. Cover and set aside for the tea to steep in. This way your green tea will never become bitter. The color of Kahwa depends purely on the saffron variety used. It ranges from light yellow to deep yellow. Crushing and adding whole spices helps in infusing the flavour well.

Variations

You can add 2 small cloves along with other whole spices while crushing. You can add cane sugar or brown sugar replacing white sugar. If you like the flavour of dried rose petals you can add it too.

Serving & Suggestion

Enjoy this tea hot in the morning or evening. This tea is meant to be consumed fresh so I do not recommend storing and consuming.
