Super-Easy Biscuit-Crust Pizza

I’ve been calling this “Cheatza Pizza” for years and have been wanting to share this recipe for so long.  The pizza has a one-bowl buttermilk biscuit dough crust pressed into a baking sheet. I love it so much because I plop the bowl on a scale, and weigh everything directly in. Just tare the scale (or power off and back on to reset the weight to zero) between ingredients. Saves dirtying so many measuring cups.  Store bought pizza sauce eliminates another step (and you can even swap in jarred marinara sauce without a noticeable difference, if that’s what you have on hand!).

Wait, You Can Use Biscuit Dough for Pizza?

Yes you can! And biscuit dough actually makes an amazing crust. All you have to do is press the dough into a baking sheet. Parchment paper makes clean-up a breeze. Wet your hands a bit with water first to prevent the biscuit dough from sticking.  I personally am committed to homemade biscuit dough because it tastes worlds better (and my recipe below is so easy) but you could use this technique with commercial biscuit dough from a can.

What is the difference between biscuit dough and bread dough?

Biscuit dough is SO much simpler than dealing with yeast dough.  The difference between the two is ingredients. In bread-style pizza dough, yeast is the leavener. In biscuit dough, it’s baking soda and/or baking powder. There’s butter in biscuit dough, and olive oil in pizza dough. Then of course there is a big difference in technique. Yeast-based homemade pizza dough isn’t difficult per se, but it requires planning ahead, kneading, rising, shaping, resting and rolling out. Not to mention a kitchen covered in flour and bits of dough.  My biscuit crust requires only one bowl, and is simply stirred together and pressed into the pan. This eliminates all typical pizza dough steps (including using a rolling pin). It couldn’t be easier.

The Toppings

I layer my pizza with pizza sauce, seasoned ground beef, pepperoni and lots of mozzarella cheese. I love to finish it with fresh basil, too. Here are some other favourite pizza toppings to sprinkle on your biscuit pizzas: 

Mushrooms (thinly sliced button mushrooms can go on raw, or you can saute some slices of portobello or shiitake mushrooms) Ham Sausage (like italian sausage or chorizo, cooked and crumbled) Bacon (cooked and crumbled) Spinach (saute it first to get more on there!) Green peppers (thinly sliced or chopped) Pineapple (if you’re that guy) Fresh tomatoes (chopped) Black olives Jalapenos or banana peppers Other cheeses (like cheddar or parmesan)

How to Make Biscuit Dough Pizza

This is super quick and easy, and a fun recipe the kids love to get involved in. Here’s what you need to do:

Prep the simple biscuit dough. Grab a big bowl and a kitchen scale if you have one (if not, volume measurements work just fine). Prepare your pan by lining it with parchment. This keeps everything nice and tidy for easy slicing and cleanup. Dump the dough into the pan and wet your hands a bit. Press the dough evenly into the bottom of the pan, re-wetting your hands as needed to prevent sticking. Par-bake the dough for 10 minutes. This ensures a crisp crust and fully-cooked centre. Top the pizza with favourite toppings and bake until bubbly.

What to Serve This With

Need a side dish? Pizza and salad go together like… two things that go perfectly together. I’m partial to keeping things easy on a weeknight with mixed greens, chopped cucumber and tomatoes, and croutons. I sprinkle it all with salt to season, then squeeze on the juice of half a lemon and give it a little drizzle of olive oil. Toss just before serving. For the kids, I put out a plate of raw veggies and ranch dip. If you want something more special, though, how about one of these?
