Pin Cornflakes Ladoo is one of the easiest and quick ladoo that you can make. Kids are fond of pori urundai so thought of making it the similar way with cornflakes. With lockdown I couldnt reach out to pori or puffed rice and had a pack of cornflakes so tried this cornflakes ladoo. To my surprise it came out perfect in the first attempt itself. Hence sharing the recipe here.
About cornflakes ladoo recipe
This is a quick recipe to begin with first make jaggery syrup to strain impurities. Prepare jaggery syrup by combining jaggery with water and heating it until jaggery completely dissolves. Strain and add the syrup to the pan.Now keep cooking until hard ball consistency is reached. Once hard ball consistency is reached add cornflakes, cardamom powder and ghee. Switch off mix it well until fully coated. Remove from stove when its still warm shape them as ladoos.
Jaggery syrup consistency
The main important step is to get the jaggery syrup consistency perfect. Add very little water while making syrup otherwise you need to stir for a longer time. Keep a bowl ready with water, keep checking after jaggery syrup becomes thick. First the syrup will form a loose ball and will be sticky, next stage it will form a hard ball. This is the perfect consistency. If you pass on this stage it will be difficult to make balls.
Variations
I crushed cornflakes slightly but you can add as such too. I used powdered jaggery you can use any variety. But make sure to strain the impurities before making ladoos. Adding cardamom powder gives a nice flavour, you can replace with vanilla essence too.

1.To begin with first take cornflakes in a bowl. Pin 2.Crush it slightly with finger tips.Pin 3.Boil jaggery with water until jaggery dissolves completely.Pin 4.Jaggery dissolved.So switch off.Pin 5.Strain and add it to the pan.Pin 6.Let it boil for 2 minutes. Pin 7.When it starts to turn frothy and bubbles like this, start checking.Pin 8.Keep a bowl ready with water, keep checking after jaggery syrup becomes thick. Pin 9.First the syrup will form a loose ball and will be sticky, next stage it will form a hard ball like shown below. Pin 10.Switch off immediately then add cornflakes, ghee and cardamom powder.Pin 11.Mix it well. Expert Tips
Make sure to be at a safe distance while making jaggery syrup as it will bubble up. Do not let kids nearby as it might splutter. Be quick after adding cornflakes. Quickly shape else it will turn out hard. Do not add more water while making the syrup, add only mentioned quantity. If the mixture turns hard, heat it up for 2 mins then start shaping again. However try to shape the balls quickly before it turns hard. For 2 cups 3/4 cup jaggery was perfect for us. But if you prefer less sweet then add 1/2 cup jaggery only.
