Pin Beetroot Pasta is really a very quick recipe that even before the pasta gets cooked the beetroot sauce gets ready, yes you heard it right. Beetroot Pasta was new to me until I saw it in Nadiyas cooking show in Netflix. It was the quickest pasta recipe I had ever seen so I thought should give this a try. I did tweak the recipe a bit to suit our taste still it turned out so delicious that mittu wanted me to make this often. My friend recommended so many cooking shows, chefs etc but I had not been able to relate myself to their cooking style or addicted to any cooking show or international celebrity. But Nadiya’s is the only cooking show that I finished almost all episodes in Netflix at one go the first time I saw itself. I browsed and browsed reading abt her, then insta added on to know more. Obviously a big fan of her cooking but what I love the most is her simplicity and attitude towards life and cooking. More than a cook, I love her for the person she is.❤️ Hubby heard the shock of his life when I said I want to meet her which is near to impossible but still dreams are dreams right?! Yes have become such a crazy fan of her and she will be my inspiration now and for years to come!
About Beetroot Pasta
This is a fairly simple beginner recipe. To begin with first cook pasta along with salt, oil and water. Cook it until its soft but not mushy. I used durum wheat pasta so it takes a little longer than the usual pasta cooking time. Pressure cook beets for 3-4 whistles with very little water. Cool down then blend it along with garlic, red chillies, olive oil and required salt. Add cooked water and blend it to a smooth puree. Add it to cooked pasta mix well. While serving add grated cheese, spring onion along with lemon juice, mixed herbs or oregano. Your beetroot pasta is ready!
Variations
The orginal recipe used feta cheese but I used mozarella cheese. Also she had used dill leaves, and I replaced it with homegrown spring onion. Herbs and seasoning is your choice, adjust according to your taste. You can use any pasta variety you have in hand. You can even add more of ginger and garlic while grinding. Also add roasted tomatoes and grind it along with beets to get a more tangy flavour.

Serving and Storage
The pasta by itself is slightly sweet and bland so herbs and seasoning while serving takes it to another level. So I would suggest to serve it with all the seasoning mentioned for a delicious combo. I would recommend to consume it fresh. Incase you want to store, make the sauce seperately store in fridge then mix it with pasta while serving.

Beetroot Pasta Recipe Step by Step
1.To begin with first add water. Pin 2.Boil well add salt and few drops of oil.Pin 3.Add pasta. I used wheat pasta.Pin 4.Cook well.It takes atleast 7-10 mins to cook, depends on pasta variety too.Pin 5.Keep an eye and keep checking.Pin 6.Check by cutting it with a spoon.If it cuts through easily then pasta is done.Switch off.Pin 7.Drain immediately. Expert Tips
You can use any variety of pasta based on availability. You can add roasted tomatoes or sundried tomatoes while grinding to get a more tangy flavour. Add feta cheese and dill leaves as topping if you get it. Make sure to cook pasta perfectly, only then it will absorb the sauce well.
