Aval Varattiyathu the name says it all…it is nothing but poha cooked with jaggery, coconut, ghee, nuts and dry fruits. It is called by different names vella aval or aval jaggery or sweet poha or inippu aval etc. Poha is very versatile and quick to make, check for more poha recipes here. About Aval Varattiyathu
Aval Varattiyathu is a simple sweet made using aval, jaggery, coconut, ghee, nuts and dry fruits. Aval means poha and varattiyathu means sauteed so Aval Varattiyathu means poha sauteed and cooked. Aval Varattiyathu is also known as Aval Varatti or Aval Vilayichath or Vella Aval or sweet poha. In Tamil Nadu we call it as vella aval and in Kerala it is popularly known as aval varattiyathu. Aval Nanachathu and Aval Varattiyathu are very popular sweet snacks in and around Kerala. Though both uses aval and jaggery as main ingredients the method and taste varies. Aval Varattiyathu is pretty easy to make, just grab a few ingredients and you can make it in under 20 minutes.I have used raw poha as traditionally it is made like this but you can soak and add it too, check tips section for more details.

Aval Varattiyathu Ingredients
Aval – You can use either use thick or thin poha. I used thin poha. Jaggery – Use powdered jaggery or block jaggery. Crush using a mortar and pestle if using block jaggery. Coconut – Use freshly grated coconut for best taste. Ghee – Use fresh puree ghee. I used homemade ghee. Flavoring – Cardamom powder and dry ginger powder are used for flavoring. Nuts & Dry fruits – Cashews, raisins are used for garnishing. Others – Sesame seeds and fried gram dal is also used.
How to make Aval Varattiyathu Step by Step
1.To a kadai add 1/2 cup powdered jaggery and 1/2 cup water. 2.Mix it well and let jaggery dissolve completely. Let it boil for few minutes no need to check for any consistency. 3.Transfer to a strainer, discard the remains and set the jaggery syrup aside. 4.Heat 1 tablespoon ghee add 1 tablespoon cashews broken. Fry until golden brown remove and set aside. 5.Add 1 tablespoon raisins let it plump up fry until golden brown, remove and set aside. 6.Add 1 tablespoon fried gram dal, fry until golden brown. Remove and set aside. 7.Add 1 tablespoon sesame seeds fry until golden. 8.Add 1/2 cup grated coconut. 9.Saute until golden. 10.Now add jaggery syrup to it, give a quick mix. 11.Let it boil. 12.When it starts to boil add 1 cup aval(poha). 13.Mix it well. Keep sauteing in low flame until poha turns soft. If you need sprinkle little water. 14.Once poha turns soft add fried cashews, raisins, fried gram dal, 1/4 teaspoon cardamom powder, 1/4 teaspoon dry ginger powder. 15.Mix it well. Aval Varattiyathu is ready!

Serve hot / warm with a dollop of ghee…yumm!!
Expert Tips
I used thin poha so it got cooked easily in jaggery syrup. If needed sprinkle little water. If using thick poha you can can rinse poha soak for few minutes or until soft then add it. Add a pinch of salt to lift up the sweetness. Use black sesame seeds which is authentically used. I didn’t have so used white sesame seeds. I recommend using thin aval as it absorbs sweetness and flavors well. You can replace white poha with red poha too. Instead of powdered jaggery, you can add cane sugar too. You can even add few banana slices and serve.
Serving & Storage
Aval Varattiyathu tastes best when consumed fresh. You can serve it as such with a garnish of ghee fried nuts, coconut etc. It keeps well in fridge for 1 day.
1.Aval Nanachathu & Aval Varattiyathu are they same?
No both are different. Aval nanachathu is a no cook version whereas aval varattiyathu is cooking aval with jaggery and other ingredients.
