Creamy ricotta: Offers a smooth texture and mild flavor to the dish. Gooey mozzarella cheese: Adds a layer of cheesy goodness to the tart. How to Make Asparagus Tart with Puff Pastry
Preheat the oven, get ready to bake: Place a pizza stone or overturned baking sheet on the bottom rack of the oven and preheat it to 450°F. Let that oven heat up for 30 minutes before baking your masterpiece. Roll out your dough: Roll out the pastry dough till it’s about 1/8″ thick and place it on a parchment lined pizza peel or rimless baking sheet. Mix it up: Stir together ricotta, mozzarella, 1 egg, garlic, lemon zest, 1 tsp of salt and pepper. Separately toss the asparagus with olive oil and remaining ¼ tsp salt. Spread your filling: Spread the ricotta filling evenly over the pie dough with a 3 inch border free around all sides of the dough edge. Arrange asparagus pieces over top filling then fold in all edges of pie crust around it enclosing it inside completely with crimping folds in along edge if desired. Brush on some egg wash: Beat remaining egg with a splash of water then brush top surface. Pastry Crust: Start by thawing your puff pastry crust up to 2 days in advance in the fridge (or in about 30 minutes on the counter or until it unfolds easily) Assemble & Bake: you build your asparagus tart in advance and refrigerate for a few hours before baking. Don’t prep it much earlier than that or the filling may seep into the crust. Store Prepped & Baked Tarts: this tart is best served the day it’s baked, as the crust will get tough as it is stored in the fridge. Store a baked tart covered in the refrigerator up to 2 days. When ready to enjoy, pop into preheated oven until heated through (about 15 minutes). Enjoy!
Recipe Adaptations
You can alternatively make it larger with homemade pie dough, as I did originally on Instagram. Later in the summer, swap the asparagus for slices of heirloom tomatoes, like I did in this instagram highlight. Add some minced herbs, like 2 tbsp of either chives, parsley or thyme to the filling.
