PinMethod:1.Pressure cook potatoes upto 3 whistles until soft. Peel of the skin, chop them into cubes and keep aside.Cook cauliflower florets in water with salt and turmeric powder until soft yet firm enough to bite.Heat oil in a pan, add jeera allow it to crackle. Add ginger garlic paste, onions fry till slightly browned. Pin2.Then add tomatoes cook until raw smell leaves.Now add turmeric, red chilli, garam masala powder and required salt. Saute for 3 mins.Pin3.Add cauliflower and potatoes, mix well. Cook until the veggies absorb the masalas, it may take 2-3 mins. Adjust salt at this stage. Garnish with coriander leaves and switch off.PinServe hot with rotis or rice. It goes well even with any variety rice.PinMy Notes:
Make sure gobi and aloo both are cooked at the same time firm enough to bite, they should not be mushy. You can use tomato puree and make it gravy kind. This is apt with naan, rotis or even any variety rice.

One of my reader asked how my gravies are redish orange in color and she wanted to know whether I add food color….I add either kashmiri red chilli powder or homemade red chilli powder other than that nothing else to add color to my gravy…Even for this I used only red chilli powder.I very rarely add kesari color…but mention it then and there where I have used food color so dont confuse with it.

Cooking the veggie along with the gravy takes a little more time but adds more flavour to the veggie and gravy too. Adding curd is purely optional,you can even skip it as the orginal recipe didnt call for it. I added curd just to add thickness to the gravy and I love the tangy taste curd adds to the gravy.
